Melted Mozzarella & Ranch Chicken Bombs

Crispy chicken bites stuffed with gooey mozzarella and ranch seasoning, perfect for game day or a quick appetizer.

For the Crust:

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup shredded mozzarella cheese
  • 1 packet (1 oz) ranch seasoning mix
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • Vegetable oil, for frying

Instructions

1. Prepare the Crust:

  1. In a bowl, combine chicken cubes with ranch seasoning mix, ensuring each piece is evenly coated.
  2. Make a small slit in each chicken cube and stuff with a pinch of shredded mozzarella. Press to seal.
  3. Set up a breading station: place flour in one bowl, beaten eggs in another, and panko mixed with garlic powder, onion powder, and black pepper in a third.
  4. Dredge each stuffed chicken piece in flour, dip in egg, then coat with panko mixture.
  5. Heat oil in a deep skillet to 350°F (175°C). Fry chicken bombs in batches for 3-4 minutes until golden brown and cooked through.
  6. Drain on paper towels and serve immediately with extra ranch dressing for dipping.

Notes

You can customize the seasonings to taste.
