White Chocolate Mocha Cheesecake

A decadent cheesecake combining white chocolate and coffee flavors with a chocolate cookie crust.

For the Crust:

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup melted butter
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 8 oz white chocolate, melted and cooled
  • 2 tbsp instant coffee granules
  • 1 tbsp hot water
  • 1 tsp vanilla extract
  • 1 cup sour cream

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Mix cookie crumbs and butter, press into 9-inch springform pan.
  2. Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each.
  3. Dissolve coffee in hot water. Add to cream cheese mixture along with melted white chocolate and vanilla.
  4. Fold in sour cream until just combined. Pour over crust and smooth top.
  5. Bake for 50-55 minutes until edges are set but center still jiggles slightly. Cool completely before refrigerating for at least 4 hours.

Notes

You can customize the seasonings to taste.
