Walking Taco Casserole

A delicious and easy-to-make casserole that brings all the flavors of walking tacos into one dish.

For the Crust:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 cup salsa
  • 2 cups crushed tortilla chips
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup sliced black olives

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Stir in taco seasoning, black beans, corn, and salsa. Cook for 5 minutes.
  4. Layer half of the crushed tortilla chips in the bottom of a greased 9×13-inch baking dish.
  5. Spread the beef mixture evenly over the chips. Top with remaining chips and shredded cheese.
  6. Bake for 15-20 minutes, until cheese is melted and bubbly.
  7. Garnish with sour cream, green onions, and black olives before serving.

Notes

You can customize the seasonings to taste.
