Sweet and Spicy Honey Pepper Chicken with Creamy Macaroni Cheese

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1 tbsp crushed red pepper flakes
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 2 cups elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1/4 tsp nutmeg

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Season chicken breasts with salt, black pepper, and garlic powder.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown.
  3. Mix honey and red pepper flakes in a bowl. Brush over chicken and bake for 15-20 minutes until cooked through.
  4. Cook macaroni according to package instructions. Drain and set aside.
  5. In a saucepan, melt butter over medium heat. Whisk in flour to create a roux. Gradually add milk, stirring until thickened.
  6. Remove from heat and stir in cheddar cheese and nutmeg until smooth. Combine with cooked macaroni.
  7. Serve chicken over macaroni cheese, drizzling with extra honey glaze if desired.
