Sweet Chili Lime Shrimp & Avocado Salad

A refreshing and zesty salad with succulent shrimp, creamy avocado, and a sweet chili lime dressing.

For the Crust:

  • 1 lb shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 4 cups mixed greens
  • 1/4 cup sweet chili sauce
  • 2 limes, juiced
  • 2 tbsp olive oil
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a bowl, toss shrimp with sweet chili sauce, lime juice, olive oil, salt, and pepper. Let marinate for 10 minutes.
  2. Heat a skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until pink and cooked through.
  3. In a large bowl, combine mixed greens, avocado, red onion, and cilantro. Add cooked shrimp.
  4. Drizzle with remaining marinade and toss gently to combine. Serve immediately.

You can customize the seasonings to taste.
