Sticky Brown Sugar Bourbon Meatball Bowls

For the Crust:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup finely chopped onion
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup brown sugar
  • 1/4 cup bourbon
  • 1/4 cup ketchup
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 2 cups cooked rice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). In a bowl, mix ground beef, breadcrumbs, egg, onion, garlic powder, salt, and pepper until combined.
  2. Shape the mixture into 1-inch meatballs and place on a baking sheet. Bake for 20 minutes or until cooked through.
  3. In a saucepan over medium heat, combine brown sugar, bourbon, ketchup, soy sauce, Worcestershire sauce, and smoked paprika. Simmer for 5-7 minutes until slightly thickened.
  4. Toss the baked meatballs in the sauce until fully coated. Serve over cooked rice.
