Spicy Jalapeño Popper Soup with Grilled Cheese Dippers

A creamy, spicy soup inspired by jalapeño poppers, served with crispy grilled cheese sandwiches for dipping.

For the Crust:

  • 4 jalapeños, seeded and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 4 slices bread
  • 2 tbsp butter, softened
  • 1 cup shredded mozzarella cheese

Instructions

1. Prepare the Crust:

  1. In a large pot, sauté onion, garlic, and jalapeños until softened.
  2. Add chicken broth and bring to a simmer. Stir in cream cheese until melted and smooth.
  3. Blend the soup until smooth using an immersion blender or regular blender (in batches).
  4. Return to heat, stir in cheddar cheese, heavy cream, smoked paprika, salt, and pepper. Simmer for 10 minutes.
  5. For the grilled cheese dippers: Butter one side of each bread slice. Place mozzarella between slices, buttered sides out.
  6. Cook in a skillet over medium heat until golden and cheese is melted, about 3-4 minutes per side. Slice into strips for dipping.
  7. Serve soup hot with grilled cheese dippers on the side.

Notes

You can customize the seasonings to taste.
