Spicy Cowboy Queso Dip

A creamy, spicy queso dip with a cowboy twist, perfect for game day or gatherings.

For the Crust:

  • 1 lb ground beef
  • 1 lb Velveeta cheese, cubed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1 tbsp taco seasoning
  • 1 tsp chili powder
  • 1/2 tsp cayenne pepper
  • 1/4 cup milk

Instructions

1. Prepare the Crust:

  1. Brown the ground beef in a skillet over medium heat, draining excess fat.
  2. Add onions and bell peppers to the skillet, sautéing until softened.
  3. Stir in taco seasoning, chili powder, and cayenne pepper.
  4. Transfer the beef mixture to a slow cooker or pot, adding Velveeta and diced tomatoes with green chilies.
  5. Cook on low heat, stirring occasionally, until the cheese is fully melted and smooth.
  6. Add milk as needed to adjust the consistency.
  7. Serve warm with tortilla chips or bread.
