Snowball Cake – soft, creamy & dreamy!

A light and fluffy vanilla cake covered in a cloud of creamy coconut frosting and rolled in sweet shredded coconut, resembling a delightful snowball.

For the Crust:

  • 1 box white cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1 cup sweetened shredded coconut
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • Additional shredded coconut for rolling

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, combine cake mix, eggs, oil, and water. Mix until smooth. Fold in 1 cup shredded coconut. Pour batter into prepared pan.
  3. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Let cake cool completely.
  4. For frosting, beat softened butter until creamy. Gradually add powdered sugar, milk, and vanilla, beating until light and fluffy.
  5. Cut cooled cake into squares. Frost each square entirely, then roll in additional shredded coconut until fully coated. Serve and enjoy!
