Sloppy Joe Potato Skillet

A hearty and comforting skillet dish combining the flavors of sloppy joes with crispy potatoes and caramelized onions.

For the Crust:

  • 1 lb ground beef
  • 4 cups diced potatoes
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 1 cup tomato sauce
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp mustard
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook until golden and crispy, about 15 minutes. Remove from skillet and set aside.
  2. In the same skillet, cook ground beef until browned. Drain excess fat.
  3. Add onion and bell pepper to the skillet with the beef. Cook until vegetables are softened, about 5 minutes.
  4. Stir in tomato sauce, brown sugar, Worcestershire sauce, mustard, garlic powder, paprika, salt, and pepper. Simmer for 5 minutes.
  5. Return the cooked potatoes to the skillet and stir to combine. Cook for an additional 2-3 minutes until heated through.
  6. Serve hot, optionally topped with shredded cheese or green onions.

Notes

You can customize the seasonings to taste.
