Roasted Carrots with Whipped Ricotta and Hot Honey

Sweet roasted carrots paired with creamy whipped ricotta and a drizzle of spicy hot honey for a perfect balance of flavors.

For the Crust:

  • 1 lb carrots, peeled and halved lengthwise
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup ricotta cheese
  • 1 tbsp lemon juice
  • 1/4 cup honey
  • 1/2 tsp red pepper flakes
  • Fresh thyme leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss carrots with olive oil, salt, and pepper on a baking sheet.
  2. Roast carrots for 25-30 minutes until tender and slightly caramelized, flipping halfway through.
  3. While carrots roast, blend ricotta and lemon juice in a food processor until smooth and creamy.
  4. In a small saucepan, warm honey and red pepper flakes over low heat for 2-3 minutes to infuse the spice.
  5. Spread whipped ricotta on a serving platter, top with roasted carrots, drizzle with hot honey, and garnish with thyme.
