Roasted Carrots with Whipped Ricotta and Hot Honey

Sweet roasted carrots served over creamy whipped ricotta and drizzled with spicy honey for a perfect balance of flavors.

For the Crust:

  • 1 lb carrots, peeled and halved lengthwise
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup ricotta cheese
  • 2 tbsp honey
  • 1/2 tsp red pepper flakes
  • 1 tbsp lemon juice
  • Fresh thyme for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss carrots with olive oil, salt, and black pepper. Spread on a baking sheet and roast for 25-30 minutes until tender and caramelized.
  2. While carrots roast, whip ricotta in a food processor or blender until smooth and creamy. Spread the whipped ricotta on a serving platter.
  3. In a small saucepan, warm honey and red pepper flakes over low heat for 2-3 minutes. Remove from heat and stir in lemon juice.
  4. Arrange roasted carrots over the whipped ricotta. Drizzle with hot honey and garnish with fresh thyme before serving.
