For the Crust:

  • 4 ripe peaches, peeled and sliced
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup milk

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. Pour melted butter into the pan and sprinkle brown sugar evenly over the butter. Arrange peach slices in a single layer on top.
  3. In a bowl, whisk together flour, baking powder, and salt. In another bowl, beat granulated sugar, egg, and vanilla until light. Gradually mix in the dry ingredients, alternating with milk.
  4. Pour the batter over the peaches and smooth the top. Bake for 30-35 minutes or until a toothpick comes out clean.
  5. Let cool for 10 minutes, then invert onto a serving plate. Serve warm or at room temperature.
