One-Pot Cajun Shrimp & Creamy Corn Orzo

A flavorful one-pot dish featuring Cajun-spiced shrimp and creamy orzo with sweet corn.

For the Crust:

  • 1 lb large shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup heavy cream
  • 1 tbsp Cajun seasoning
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. In a large pot, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
  2. Add shrimp and Cajun seasoning, cooking for 2-3 minutes per side until pink. Remove shrimp and set aside.
  3. In the same pot, add orzo and toast for 1 minute. Pour in chicken broth and bring to a simmer.
  4. Cook orzo for 8-10 minutes, stirring occasionally, until liquid is mostly absorbed.
  5. Stir in corn and heavy cream, cooking for 2-3 minutes until creamy. Add Parmesan cheese and mix well.
  6. Return shrimp to the pot and stir to combine. Season with salt and pepper to taste.
  7. Garnish with fresh parsley before serving.

Notes

You can customize the seasonings to taste.
