One-Pan Cajun Shrimp & Sausage Rice Skillet

A flavorful and easy one-pan meal with Cajun-spiced shrimp, sausage, and rice cooked together for a hearty dish.

For the Crust:

  • 1 lb large shrimp, peeled and deveined
  • 12 oz smoked andouille sausage, sliced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped parsley (for garnish)

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned, about 5 minutes.
  2. Add bell pepper, onion, and garlic. Sauté until vegetables soften, about 3-4 minutes.
  3. Stir in rice, Cajun seasoning, salt, and black pepper. Cook for 1 minute to toast the rice lightly.
  4. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
  5. Add shrimp to the skillet, nestling them into the rice. Cover and cook for another 5-7 minutes until shrimp are pink and cooked through.
  6. Garnish with chopped parsley before serving.

Notes

You can customize the seasonings to taste.
