Old-Fashioned Pudding Cake

For the Crust:

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup milk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1/4 cup cocoa powder
  • 1 1/2 cups hot water

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. In a medium bowl, whisk together flour, baking powder, salt, and granulated sugar.
  3. Stir in milk, melted butter, and vanilla until just combined. Spread batter evenly in prepared dish.
  4. In a small bowl, mix brown sugar and cocoa powder. Sprinkle evenly over batter.
  5. Pour hot water gently over the top—do not stir.
  6. Bake for 30-35 minutes, until the top is set and springs back when touched. Serve warm.
