Old Fashioned Mounds Cake – Coconut Lovers’ Dream!

A rich and moist coconut cake inspired by the classic Mounds candy bar, perfect for coconut lovers.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup water
  • 1/3 cup vegetable oil
  • 1 tbsp white vinegar
  • 1 tsp vanilla extract
  • 1 1/2 cups sweetened shredded coconut
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
  3. Add water, vegetable oil, vinegar, and vanilla extract. Mix until smooth.
  4. Fold in 1 cup of shredded coconut. Pour batter into the prepared pan.
  5. Bake for 30-35 minutes or until a toothpick inserted comes out clean. Let cool completely.
  6. In a saucepan, heat heavy cream until just boiling. Pour over chocolate chips and let sit for 2 minutes, then stir until smooth.
  7. Spread chocolate ganache over the cooled cake and sprinkle with remaining coconut.
