For the Crust:

  • 1 lb salmon fillets
  • 2 tbsp white miso paste
  • 2 tbsp maple syrup
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp grated ginger
  • 2 cups cooked white rice
  • 1 cup sliced cucumber
  • 1 cup shredded carrots
  • 1 avocado, sliced
  • 1 tbsp sesame seeds
  • 1 tbsp chopped green onions

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together miso paste, maple syrup, soy sauce, rice vinegar, and grated ginger.
  3. Place salmon fillets on the baking sheet and brush generously with the miso maple glaze.
  4. Bake for 12-15 minutes, or until salmon is cooked through and flakes easily.
  5. Divide cooked rice among bowls. Top with glazed salmon, cucumber, carrots, and avocado slices.
  6. Sprinkle with sesame seeds and green onions before serving.

Notes

You can customize the seasonings to taste.
