Maple Dijon Glazed Chicken & Sweet Potato Bake

A savory-sweet one-pan meal featuring tender chicken and roasted sweet potatoes coated in a maple Dijon glaze.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 1/4 cup pure maple syrup
  • 2 tbsp Dijon mustard
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh rosemary, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together maple syrup, Dijon mustard, olive oil, garlic powder, smoked paprika, salt, and pepper.
  3. Arrange chicken breasts and sweet potato cubes on the prepared baking sheet. Pour the glaze over both, tossing to coat evenly.
  4. Sprinkle chopped rosemary over the top.
  5. Bake for 25-30 minutes until chicken reaches 165°F (74°C) internally and sweet potatoes are tender, stirring potatoes once halfway through.
  6. Let rest for 5 minutes before serving.
