Maple Bourbon Glazed Bacon-Wrapped Meatloaf

A savory meatloaf wrapped in crispy bacon and glazed with a sweet and smoky maple bourbon sauce.

For the Crust:

  • 1.5 lbs ground beef
  • 1/2 lb ground pork
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 egg
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 810 slices bacon
  • 1/4 cup maple syrup
  • 2 tbsp bourbon
  • 1 tbsp brown sugar
  • 1 tbsp Dijon mustard

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix ground beef, ground pork, breadcrumbs, milk, egg, onion, garlic, salt, pepper, and smoked paprika until well combined.
  3. Shape the mixture into a loaf on the prepared baking sheet. Arrange bacon slices over the top and sides of the meatloaf, tucking the ends underneath.
  4. In a small bowl, whisk together maple syrup, bourbon, brown sugar, and Dijon mustard. Brush half of the glaze over the bacon-wrapped meatloaf.
  5. Bake for 45 minutes, then brush with remaining glaze. Continue baking for 15 minutes or until internal temperature reaches 160°F (71°C).
  6. Let rest for 10 minutes before slicing and serving.
