Maple Bacon Brussels Sprouts & Sweet Potato Hash

A savory and sweet hash featuring crispy bacon, caramelized Brussels sprouts, and tender sweet potatoes, all glazed with maple syrup.

For the Crust:

  • 4 slices thick-cut bacon, chopped
  • 1 large sweet potato, diced
  • 2 cups Brussels sprouts, trimmed and halved
  • 1 small red onion, diced
  • 2 tbsp maple syrup
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large skillet, cook bacon over medium heat until crispy. Remove with a slotted spoon and set aside, leaving the bacon fat in the pan.
  2. Add olive oil to the skillet, then add sweet potatoes. Cook for 8-10 minutes, stirring occasionally, until they begin to soften.
  3. Add Brussels sprouts and red onion to the skillet. Cook for another 5-7 minutes until vegetables are tender and caramelized.
  4. Stir in maple syrup, smoked paprika, salt, and black pepper. Cook for 2 more minutes until everything is well coated.
  5. Return the cooked bacon to the skillet and toss to combine. Serve warm.

Notes

You can customize the seasonings to taste.
