Loaded Jalapeño Popper Chicken Casserole

A creamy, cheesy casserole packed with spicy jalapeños, tender chicken, and crispy bacon for a flavorful twist on classic jalapeño poppers.

For the Crust:

  • 2 cups cooked chicken, shredded
  • 4 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 4 jalapeños, diced (seeds removed for milder heat)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 slices bacon, cooked and crumbled
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup panko breadcrumbs
  • 2 tbsp melted butter

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, mix cream cheese, sour cream, mayonnaise, garlic powder, onion powder, salt, and pepper until smooth.
  3. Stir in shredded chicken, diced jalapeños, cheddar cheese, Monterey Jack cheese, and half of the crumbled bacon.
  4. Spread mixture evenly into the prepared baking dish.
  5. In a small bowl, combine panko breadcrumbs and melted butter. Sprinkle over the casserole.
  6. Bake for 25-30 minutes until bubbly and golden brown on top.
  7. Garnish with remaining bacon before serving.

Notes

You can customize the seasonings to taste.
