Homemade Lemon Cake With Chocolate Frosting

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 cup buttermilk
  • 1/4 cup fresh lemon juice
  • 2 tbsp lemon zest
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in lemon juice and zest.
  3. Combine flour, baking powder, baking soda, and salt. Gradually add to wet ingredients alternating with buttermilk, mixing until smooth.
  4. Divide batter evenly between pans. Bake for 25-30 minutes or until a toothpick comes out clean. Cool completely.
  5. For frosting, heat cream until simmering. Pour over chocolate chips and butter, let sit 2 minutes, then whisk until smooth. Chill until spreadable.
  6. Frost cooled cake layers with chocolate frosting. Refrigerate 30 minutes before serving.
