For the Crust:
1 lb potato gnocchi
3 tbsp unsalted butter
4 cloves garlic (minced)
8 oz cremini mushrooms (sliced)
4 cups fresh spinach
1/2 cup heavy cream
1/4 cup grated parmesan cheese
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp red pepper flakes (optional)
Instructions
1. Prepare the Crust:
Cook gnocchi according to package instructions. Drain and set aside.
In a large skillet, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
Add mushrooms and cook for 5-6 minutes until softened and browned.
Stir in spinach and cook until wilted, about 2 minutes.
Pour in heavy cream and bring to a simmer. Add cooked gnocchi, parmesan, salt, pepper, and red pepper flakes. Stir to combine and cook for 2-3 minutes until sauce thickens slightly.
