Garlic Butter Mushroom & Spinach Gnocchi

A creamy and flavorful dish featuring pillowy gnocchi, sautéed mushrooms, and fresh spinach in a rich garlic butter sauce.

For the Crust:

  • 1 lb potato gnocchi
  • 3 tbsp unsalted butter
  • 4 cloves garlic (minced)
  • 8 oz cremini mushrooms (sliced)
  • 4 cups fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)

Instructions

1. Prepare the Crust:

  1. Cook gnocchi according to package instructions. Drain and set aside.
  2. In a large skillet, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
  3. Add mushrooms and cook for 5-6 minutes until softened and browned.
  4. Stir in spinach and cook until wilted, about 2 minutes.
  5. Pour in heavy cream and bring to a simmer. Add cooked gnocchi, parmesan, salt, pepper, and red pepper flakes. Stir to combine and cook for 2-3 minutes until sauce thickens slightly.
  6. Serve immediately with extra parmesan if desired.

Notes

You can customize the seasonings to taste.
