Crispy Korean BBQ Pork Belly Tacos

A fusion dish combining crispy pork belly with Korean BBQ flavors, served in warm tortillas with fresh toppings.

For the Crust:

  • 1 lb pork belly, sliced into thin strips
  • 1/4 cup Korean BBQ sauce
  • 8 small corn tortillas
  • 1 cup shredded purple cabbage
  • 1/2 cup sliced green onions
  • 1/4 cup chopped cilantro
  • 1 tbsp sesame oil
  • 1 tbsp gochujang (Korean chili paste)
  • 1 lime, cut into wedges
  • 1 tsp sesame seeds

Instructions

1. Prepare the Crust:

  1. Marinate pork belly strips in Korean BBQ sauce and sesame oil for at least 30 minutes.
  2. Heat a skillet over medium-high heat and cook pork belly until crispy, about 5-7 minutes per side.
  3. Warm tortillas in a dry skillet or microwave.
  4. Assemble tacos by placing crispy pork belly on tortillas, then topping with cabbage, green onions, and cilantro.
  5. Drizzle with gochujang and sprinkle with sesame seeds. Serve with lime wedges.
