Crispy Air Fryer BBQ Chicken Egg Rolls

A delicious twist on classic egg rolls, filled with BBQ chicken and cooked to crispy perfection in the air fryer.

For the Crust:

  • 2 cups cooked shredded chicken
  • 1/2 cup BBQ sauce
  • 1 cup coleslaw mix
  • 8 egg roll wrappers
  • 1 tablespoon water
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Cooking spray

Instructions

1. Prepare the Crust:

  1. In a bowl, mix shredded chicken, BBQ sauce, coleslaw mix, garlic powder, onion powder, salt, and black pepper.
  2. Place an egg roll wrapper on a clean surface. Spoon 2-3 tablespoons of the chicken mixture onto the center.
  3. Fold the bottom corner over the filling, then fold in the sides. Roll tightly, sealing the top corner with a dab of water.
  4. Preheat air fryer to 375°F (190°C). Lightly spray the egg rolls with cooking spray.
  5. Place egg rolls in the air fryer basket in a single layer. Cook for 8-10 minutes, flipping halfway, until golden and crispy.
  6. Serve hot with additional BBQ sauce for dipping.

Notes

You can customize the seasonings to taste.
