Coffee Ice Cream Cake

A dreamy frozen delight featuring layers of coffee ice cream, chocolate cookie crust, and whipped cream topping.

For the Crust:

  • 2 cups chocolate cookie crumbs
  • 6 tablespoons melted butter
  • 1/4 cup granulated sugar
  • 1.5 quarts coffee ice cream, softened
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Chocolate shavings for garnish

Instructions

1. Prepare the Crust:

  1. Combine cookie crumbs, melted butter, and sugar. Press into 9-inch springform pan and freeze for 15 minutes.
  2. Spread softened coffee ice cream over crust, smoothing top. Freeze for 2 hours until firm.
  3. Whip heavy cream with powdered sugar and vanilla until stiff peaks form. Spread over ice cream layer.
  4. Garnish with chocolate shavings. Freeze for at least 4 hours or overnight before serving.
