Chocolate Pecan Loaf

For the Crust:

  • 1 3/4 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chopped pecans
  • 1/2 cup chocolate chips
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 3/4 cup buttermilk

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Stir in chopped pecans and chocolate chips.
  4. In another bowl, beat eggs, oil, vanilla, and buttermilk until smooth.
  5. Pour wet ingredients into dry ingredients and mix until just combined.
  6. Transfer batter to the prepared loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
  7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
