Cheesy Stuffed Meatloaf Bites

For the Crust:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 1/4 cup ketchup

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F and grease a mini muffin tin.
  2. In a large bowl, mix ground beef, breadcrumbs, egg, milk, garlic powder, onion powder, salt, and pepper until well combined.
  3. Press a small amount of meat mixture into each muffin cup, creating a well in the center.
  4. Fill each well with shredded cheddar cheese, then top with more meat mixture to seal.
  5. Brush tops with ketchup and bake for 20-25 minutes until cooked through.
  6. Let cool slightly before serving.
