Spicy, cheesy meatballs with a jalapeño popper twist, cooked in a skillet for a flavorful and easy meal.

For the Crust:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 jalapeños, diced (seeds removed for less heat)
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1/4 cup chopped green onions (for garnish)

Instructions

1. Prepare the Crust:

  1. In a large bowl, mix ground beef, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper until well combined.
  2. In a separate bowl, mix cream cheese, cheddar cheese, and diced jalapeños.
  3. Form small meatballs with the beef mixture, stuffing each with a teaspoon of the cheese-jalapeño filling.
  4. Heat olive oil in a skillet over medium heat. Add meatballs and cook for 10-12 minutes, turning occasionally, until browned and cooked through.
  5. Garnish with chopped green onions and serve hot.
