Cheddar Beer Pretzel Bites with Jalapeño Dip

Soft, chewy pretzel bites filled with cheddar cheese and beer, served with a spicy jalapeño dip.

For the Crust:

  • 1 1/2 cups warm water
  • 1 packet active dry yeast
  • 1 tbsp sugar
  • 4 cups all-purpose flour
  • 1 tsp salt
  • 1/2 cup beer (lager or ale)
  • 1 cup shredded cheddar cheese
  • 1/4 cup baking soda
  • 1 egg, beaten
  • Coarse salt for topping
  • 1/2 cup sour cream
  • 2 tbsp chopped jalapeños
  • 1 tsp lime juice
  • 1/4 tsp garlic powder

Instructions

1. Prepare the Crust:

  1. In a bowl, mix warm water, yeast, and sugar. Let sit for 5 minutes until foamy.
  2. Add flour, salt, beer, and cheddar cheese. Knead into a smooth dough.
  3. Cover and let rise for 1 hour or until doubled in size.
  4. Preheat oven to 450°F (230°C). Boil 6 cups of water with baking soda.
  5. Divide dough into small balls. Boil each for 30 seconds, then place on a baking sheet.
  6. Brush with beaten egg and sprinkle with coarse salt. Bake for 12-15 minutes until golden.
  7. For the dip, mix sour cream, jalapeños, lime juice, and garlic powder. Serve with pretzel bites.

Notes

You can customize the seasonings to taste.
