For the Crust:
2 cups all-purpose flour
1 cup brown sugar
1/2 cup unsalted butter, softened
2 large eggs
1 cup buttermilk
1 tsp baking soda
1 tsp vanilla extract
1/2 tsp salt
1 cup butterscotch chips
For frosting: 1/2 cup butter, 1 cup brown sugar, 1/4 cup milk, 2 cups powdered sugar, 1 tsp vanilla
Instructions
1. Prepare the Crust:
Preheat oven to 350°F. Grease and flour two 9-inch round pans.
Cream butter and brown sugar. Add eggs one at a time, then vanilla. Mix flour, baking soda, and salt in separate bowl.
Alternately add flour mixture and buttermilk to butter mixture. Fold in butterscotch chips. Divide batter between pans.
Bake 25-30 minutes until toothpick comes out clean. Cool completely.
For frosting: Melt butter, add brown sugar and milk. Boil 1 minute. Cool slightly, then beat in powdered sugar and vanilla until smooth. Frost cooled cake.
