Butterscotch Cake with Caramel Frosting

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup buttermilk
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 cup butterscotch chips
  • For frosting: 1/2 cup butter, 1 cup brown sugar, 1/4 cup milk, 2 cups powdered sugar, 1 tsp vanilla

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F. Grease and flour two 9-inch round pans.
  2. Cream butter and brown sugar. Add eggs one at a time, then vanilla. Mix flour, baking soda, and salt in separate bowl.
  3. Alternately add flour mixture and buttermilk to butter mixture. Fold in butterscotch chips. Divide batter between pans.
  4. Bake 25-30 minutes until toothpick comes out clean. Cool completely.
  5. For frosting: Melt butter, add brown sugar and milk. Boil 1 minute. Cool slightly, then beat in powdered sugar and vanilla until smooth. Frost cooled cake.
