Buffalo Ranch Stuffed Potato Casserole

A creamy, spicy twist on classic potato casserole with buffalo sauce and ranch flavors.

For the Crust:

  • 4 large russet potatoes, peeled and diced
  • 1/2 cup buffalo sauce
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup crumbled blue cheese (optional)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Boil diced potatoes in salted water until tender, about 10-12 minutes. Drain well.
  3. In a large bowl, mash potatoes with buffalo sauce, ranch dressing, sour cream, garlic powder, onion powder, salt, and pepper.
  4. Spread mixture into the prepared baking dish. Top with shredded cheddar cheese.
  5. Bake for 20-25 minutes until cheese is melted and bubbly.
  6. Garnish with green onions and blue cheese (if using) before serving.

Notes

You can customize the seasonings to taste.
