Buffalo Ranch Chicken Stuffed Sweet Potatoes

A flavorful twist on stuffed sweet potatoes with spicy buffalo chicken and cool ranch flavors.

For the Crust:

  • 4 medium sweet potatoes
  • 2 cups cooked shredded chicken
  • 1/4 cup buffalo sauce
  • 1/4 cup ranch dressing
  • 1/2 cup shredded cheddar cheese
  • 2 green onions, sliced
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake for 45-50 minutes until tender.
  2. In a bowl, mix shredded chicken with buffalo sauce, garlic powder, salt, and pepper.
  3. Slice open baked sweet potatoes and fluff the insides with a fork. Stuff each with buffalo chicken mixture.
  4. Drizzle ranch dressing over each potato and sprinkle with cheddar cheese.
  5. Return to oven for 5 minutes to melt cheese. Garnish with green onions before serving.
