Buffalo Chicken Bacon Mac and Cheese Lasagna

A decadent fusion of mac and cheese, buffalo chicken, and crispy bacon layered like lasagna for the ultimate comfort food.

For the Crust:

  • 12 oz elbow macaroni
  • 3 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 8 slices cooked bacon, crumbled
  • 3 cups shredded cheddar cheese
  • 2 cups shredded mozzarella cheese
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 1/2 cups milk
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 cup blue cheese crumbles (optional)
  • 2 tbsp chopped green onions

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F. Cook macaroni according to package directions, drain.
  2. Toss shredded chicken with buffalo sauce in a bowl.
  3. Melt butter in a saucepan, whisk in flour to make a roux. Gradually add milk, whisking until smooth. Stir in garlic and onion powder.
  4. Remove sauce from heat, stir in 2 cups cheddar and 1 cup mozzarella until melted. Mix cheese sauce with cooked macaroni.
  5. Layer half the mac and cheese in a 9×13 baking dish. Top with buffalo chicken, half the bacon, and remaining cheeses. Repeat layers.
  6. Bake for 20-25 minutes until bubbly. Top with blue cheese crumbles and green onions before serving.

You can customize the seasonings to taste.
