For the Crust:
4 salmon fillets (6 oz each)
1 cup orzo pasta
4 tbsp unsalted butter
3 cloves garlic (minced)
1 lemon (zested and juiced)
1/2 cup grated parmesan cheese
2 cups chicken broth
1/4 cup fresh parsley (chopped)
1 tsp salt
1/2 tsp black pepper
1/4 tsp red pepper flakes (optional)
Instructions
1. Prepare the Crust:
Preheat oven to 375°F (190°C). In a large oven-safe skillet, melt butter over medium heat. Cook until butter turns golden brown and smells nutty (about 3-4 minutes).
Add minced garlic and cook for 30 seconds until fragrant. Stir in orzo, lemon zest, salt, black pepper, and red pepper flakes. Cook for 1 minute.
Pour in chicken broth and bring to a simmer. Cook for 5 minutes, stirring occasionally, until orzo is slightly tender.
Remove from heat. Stir in parmesan cheese and half the lemon juice. Nestle salmon fillets into the orzo mixture.
Bake uncovered for 15-18 minutes until salmon is cooked through. Garnish with fresh parsley and remaining lemon juice before serving.
