Blueberry Peach Feta Salad

  • 4 cups mixed salad greens
  • 1 cup fresh blueberries
  • 2 ripe peaches, sliced into thin wedges
  • ½ cup crumbled feta cheese
  • ¼ cup walnuts, toasted and chopped (optional)
  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Wash and dry the blueberries and mixed salad greens.
  2. Slice the peaches into thin wedges.
  3. Toast and chop the walnuts, if using.
  4. In a large salad bowl, combine the mixed salad greens, blueberries, and peach slices.
  5. Crumble the feta cheese over the salad.
  6. Add the toasted walnuts, if using.
  7. In a small mixing bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and pepper until well combined.
  8. Drizzle the dressing over the salad and toss gently to combine, ensuring all ingredients are evenly coated with the dressing.
  9. Serve the salad immediately, or chill in the refrigerator for about 30 minutes before serving for best flavor.
