For the Crust:

  • 1 lb shrimp, peeled and deveined
  • 2 cups cooked white rice
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup chopped green onions
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup breadcrumbs
  • 1 tbsp melted butter

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, mix cooked rice, shrimp, cheddar cheese, sour cream, mayonnaise, green onions, garlic powder, paprika, salt, and black pepper.
  3. Spread the mixture evenly into the prepared baking dish.
  4. In a small bowl, combine breadcrumbs and melted butter. Sprinkle over the casserole.
  5. Bake for 25-30 minutes, or until the top is golden brown and the shrimp is cooked through.
  6. Let cool for 5 minutes before serving.
