Banana Cream Cheesecake

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 3 ripe bananas, mashed
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 banana, sliced (for garnish)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C).
  2. Mix graham cracker crumbs and melted butter, then press into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add mashed bananas, eggs, and vanilla; mix well.
  4. Pour the filling over the crust and bake for 45-50 minutes or until the center is set.
  5. Let the cheesecake cool, then refrigerate for at least 4 hours.
  6. Whip heavy cream and powdered sugar until stiff peaks form. Spread over the cheesecake and garnish with banana slices before serving.
