Baked Jalapeño Popper Chicken Casserole

A spicy and cheesy casserole combining the flavors of jalapeño poppers with tender chicken for a hearty meal.

For the Crust:

  • 2 cups cooked chicken, shredded
  • 4 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 jalapeños, diced (seeds removed for less heat)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup crushed tortilla chips (for topping)
  • 2 tbsp chopped fresh cilantro (optional garnish)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, mix cream cheese, sour cream, mayonnaise, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth.
  3. Stir in shredded chicken, cheddar cheese, Monterey Jack cheese, and diced jalapeños until well combined.
  4. Spread mixture evenly into the prepared baking dish. Top with crushed tortilla chips.
  5. Bake for 25-30 minutes or until bubbly and golden on top.
  6. Garnish with fresh cilantro if desired. Serve warm.
