Bailey’s Chocolate Cheesecake

A rich, creamy cheesecake infused with Bailey’s Irish Cream and swirled with decadent chocolate.

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup Bailey’s Irish Cream
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips, melted and cooled

Instructions

  1. Preheat oven to 325°F (165°C). Mix cookie crumbs and melted butter; press into a 9-inch springform pan.
  2. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in Bailey’s and vanilla.
  3. Fold in melted chocolate until just combined. Pour over crust and smooth the top.
  4. Bake for 45-50 minutes until center is almost set. Cool completely, then refrigerate for at least 4 hours.
