Bacon Mushroom Swiss Cheeseburger Soup

A rich and creamy soup inspired by the flavors of a classic bacon mushroom Swiss cheeseburger.

For the Crust:

  • 6 slices bacon, chopped
  • 1 lb ground beef
  • 1 small onion, diced
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 4 cups beef broth
  • 1 cup heavy cream
  • 2 cups shredded Swiss cheese
  • 1 tsp Worcestershire sauce
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large pot, cook bacon over medium heat until crispy. Remove with a slotted spoon and set aside.
  2. Add ground beef to the pot and cook until browned. Drain excess fat if needed.
  3. Add onion, mushrooms, and garlic. Cook until vegetables are softened, about 5 minutes.
  4. Sprinkle flour over the mixture and stir to combine. Cook for 1 minute.
  5. Gradually whisk in beef broth. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  6. Stir in heavy cream, Swiss cheese, Worcestershire sauce, and smoked paprika. Cook until cheese is melted and soup is creamy.
  7. Season with salt and pepper to taste. Serve topped with reserved bacon.
