A light and flavorful stir fry featuring zucchini noodles, tender chicken, and a zesty lemon parmesan sauce.

For the Crust:
2 large zucchini, spiralized into noodles
1 lb boneless, skinless chicken breast, sliced into thin strips
2 tbsp olive oil
3 cloves garlic, minced
1/4 cup grated parmesan cheese
2 tbsp lemon juice
1 tsp lemon zest
1/2 tsp red pepper flakes
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
1. Prepare the Crust:
Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add chicken strips and cook until golden and cooked through, about 5-6 minutes. Remove from skillet and set aside.
In the same skillet, add remaining olive oil and garlic. Sauté for 30 seconds until fragrant.
Add zucchini noodles and stir fry for 2-3 minutes until just tender. Return chicken to the skillet.
Add lemon juice, lemon zest, parmesan cheese, red pepper flakes, salt, and black pepper. Toss everything together until well combined and heated through.
