Thai Peanut Chicken Noodle Stir Fry

A flavorful and easy stir fry with tender chicken, noodles, and a rich peanut sauce.

For the Crust:

  • 8 oz rice noodles
  • 1 lb boneless chicken breast, sliced
  • 2 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1 cup shredded carrots
  • 3 green onions, chopped
  • 1/4 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1/4 tsp red pepper flakes
  • 1/4 cup chopped peanuts

Instructions

1. Prepare the Crust:

  1. Cook rice noodles according to package instructions, then drain and set aside.
  2. Heat oil in a large pan over medium-high heat. Add chicken and cook until no longer pink, about 5-6 minutes.
  3. Add bell pepper, carrots, and green onions to the pan. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
  4. In a small bowl, whisk together peanut butter, soy sauce, honey, lime juice, garlic, ginger, and red pepper flakes.
  5. Add cooked noodles and peanut sauce to the pan. Toss everything together until well coated and heated through.
  6. Garnish with chopped peanuts before serving.
