Taco Pasta Salad

A zesty and hearty pasta salad with all the flavors of your favorite tacos.

For the Crust:

  • 8 oz rotini pasta
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 1/2 cup black olives, sliced
  • 1/2 cup sour cream
  • 1/4 cup salsa
  • 1/4 cup chopped cilantro
  • 2 cups shredded lettuce

Instructions

1. Prepare the Crust:

  1. Cook pasta according to package instructions, then drain and rinse with cold water.
  2. Brown ground beef in a skillet over medium heat, then stir in taco seasoning and 1/4 cup water. Simmer for 5 minutes.
  3. In a large bowl, combine cooled pasta, seasoned beef, tomatoes, cheese, olives, sour cream, and salsa. Mix well.
  4. Refrigerate for at least 30 minutes before serving. Top with shredded lettuce and cilantro just before serving.

Notes

You can customize the seasonings to taste.
