Sweet Potato Kale Gratin is a must-try comfort dish!
- 2 large sweet potatoes (about 1.5 lbs or 680 g), peeled and thinly sliced
- 4 cups kale, stems removed and chopped (about 1 bunch)
- 1 cup heavy cream (240 ml)
- 3 cloves garlic, minced
- 1 cup Gruyère cheese, grated (about 100 g)
- 1/4 teaspoon ground nutmeg
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon olive oil (for greasing the baking dish)
- Preheat your oven to 375°F (190°C).
- Peel and thinly slice the sweet potatoes, then set aside.
- Wash and chop the kale, then sauté in a skillet with a splash of water or olive oil for 5-7 minutes until wilted.
- Grease a 9×13 inch baking dish with olive oil.
- Layer sweet potato slices, sautéed kale, cream mixture, and Gruyère cheese in the baking dish, repeating until all ingredients are used.
- Cover with aluminum foil and bake for 30 minutes, then remove the foil and bake for an additional 20-25 minutes until golden brown and tender.
- Let cool for 10 minutes before serving.
