Sweet Heat Tropical Chicken Tacos

Juicy chicken tacos with a sweet and spicy tropical twist, featuring pineapple and jalapeño for a perfect balance of flavors.

For the Crust:

  • 1 lb boneless, skinless chicken thighs
  • 1 cup diced fresh pineapple
  • 1 jalapeño, seeded and finely chopped
  • 2 tbsp honey
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 8 small corn tortillas
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup crumbled queso fresco

Instructions

1. Prepare the Crust:

  1. In a bowl, mix honey, lime juice, chili powder, cumin, and garlic powder. Add chicken thighs and marinate for at least 30 minutes.
  2. Grill or pan-sear chicken over medium heat until fully cooked, about 6-7 minutes per side. Let rest, then slice into strips.
  3. Warm tortillas and assemble tacos with chicken, pineapple, jalapeño, cilantro, and queso fresco.
