Sweet Chili Honey Garlic Meatball Bowls

Tender meatballs glazed in a sweet chili honey garlic sauce, served over rice with crisp vegetables.

For the Crust:

  • 1 lb ground chicken or pork
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1/4 cup sweet chili sauce
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp grated ginger
  • 2 cups cooked rice
  • 1 cup shredded carrots
  • 1/2 cup sliced cucumbers
  • 2 green onions, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F. Mix ground meat, breadcrumbs, egg, and half the minced garlic. Form into 1-inch meatballs.
  2. Bake meatballs for 20 minutes or until cooked through.
  3. In a saucepan, combine sweet chili sauce, honey, soy sauce, rice vinegar, ginger, and remaining garlic. Simmer for 5 minutes.
  4. Toss cooked meatballs in the sauce until coated.
  5. Divide rice among bowls, top with meatballs, carrots, cucumbers, and green onions. Drizzle with extra sauce.
