A flavorful and juicy pork tenderloin glazed with sweet chili sauce, topped with a refreshing pineapple salsa.

For the Crust:
1 lb pork tenderloin
1/2 cup sweet chili sauce
2 tbsp soy sauce
1 tbsp olive oil
1 cup diced fresh pineapple
1/4 cup diced red bell pepper
2 tbsp chopped cilantro
1 tbsp lime juice
1/2 tsp red pepper flakes (optional)
Instructions
1. Prepare the Crust:
Preheat oven to 375°F (190°C).
In a small bowl, mix sweet chili sauce and soy sauce. Brush half of the mixture over the pork tenderloin.
Heat olive oil in an oven-safe skillet over medium-high heat. Sear the pork on all sides until browned, about 2-3 minutes per side.
Transfer the skillet to the oven and roast for 15-20 minutes, or until the internal temperature reaches 145°F (63°C). Brush with remaining glaze halfway through cooking.
While the pork cooks, prepare the salsa by combining pineapple, red bell pepper, cilantro, lime juice, and red pepper flakes in a bowl.
Let the pork rest for 5 minutes before slicing. Serve topped with pineapple salsa.
